As we all know, DeForest, Wisconsin and most of America is under a stay at home order. With sit-down restaurants closed, fast food is getting old quickly.  Using these recipes, you can put an end to your hunger and boredom. 

Chicken and Rice (5 Servings)

What you’ll need:

-2 cups of chicken broth

-1 tbsp of garlic salt (or 1 tbsp of garlic powder and 1/2 tsp salt)

-1/2 tbsp onion powder

-1 tsp of salt, pepper, and parsley flakes 

-2 family sized cans of Cream of Mushroom soup

-White rice

 Mix together broth, garlic salt, onion powder, salt, pepper and parsley, then marinate up to five pieces of chicken in it, covered in saran wrap. Marinate for 1-2 hours in the fridge. Then, cook the chicken at 425 degrees for 25 minutes in the marinade. While that’s cooking, prepare 1 serving of rice for every chicken breast. Add the cream of mushroom soup (2 family sized cans for 5 servings) to the rice. If it seems like there’s a lot of broth, drain some, but leave in about a 1/4 cup. Finally, spread the rice/soup mixture over the chicken, cover with tinfoil and cook for an additional 10 minutes.

 

Chocolate Pancakes 

This recipe is nice and straight forward. For every 2 cups of mix (with pancake mix, or this recipe) add in 2 tablespoons of cocoa powder and 2 tablespoons of sugar. You could also substitute 2 tablespoons of hot chocolate. Also, throw in chocolate chips if you’d like! Helpful tips for cooking the pancakes include preheating the pan you’re cooking with, melting a thin layer of butter every time you begin a new pancake, and they’ll be done cooking a few moments after you see the center/edges stop having new bubbles.

 

Apple Pie Dumplings

What you’ll need: 

-1 stick butter

-1 cup brown sugar

-1/2 tbsp cinnamon 

-1/2 tsp nutmeg 

-Dash salt

-1/2 tsp vanilla

-1/2 a can of Mountain Dew 

-1 can crescent rolls 

-2 apples (we used honey crisp)

 Preheat the oven to 350 degrees and line a baking pan with tin foil. Melt butter- combine everything except the apples, Mountain Dew and dough. Roll the dough out onto a flat surface and sprinkle on a thin layer of cinnamon and brown sugar. Then, carefully wrap the apple slices in the dough. Use the additional apple slices by placing them around the foil wrapped container. Pour the first mixture on top, then pour the half a can of mt few on top. Cook for 15 minutes or until a dark golden brown.

 

Homemade Spaghetti Sauce

What you’ll need:

-One can (29oz) Sauce

-One can (29oz) Diced Tomatoes 

-One can (12oz) Paste 

-Optional: 1 lb beef, 8oz Italian Sausage

-1 tablespoon of chopped onion flakes

-1 tablespoon of minced garlic

-Put in a good sprinkle of salt and pepper

-2 tablespoons of garlic powder

-1/2 teaspoon of fennel seeds

-1 teaspoon of basil

First, cook the meat in a large saucepan. Once close to done, add in the minced garlic and chopped onion flakes. Mix in the rest of the ingredients, then simmer on low heat covered for at least fifteen minutes, stirring occasionally. For extra flavor you may skip simmering and cook in a crock pot on low for 2-4 hours. Serve over your favorite pasta noodles. 

 

Horchata Rice (2 servings)

What you’ll need: 

-White rice (2 servings)

-1/2 cup milk

-2-1/2 Tbsp Sugar

-1 tsp Cinnamon 

Prepare the rice as directed. Then, mix in sugar cinnamon and milk. Enjoy warm!
